Who doesn’t know that moment at the end of dinner, when everyone is eyeing on the dessert menu trapped between anticipation and guilt. Well, the exact same happened last night when I met – the amazingly inspiring – Coco at a friend’s dinner at the new You Vienna (Le Meridien Hotel). We opted for the Oreo Chocolate Cake, which looked and tasted delicious but a bit of an overkill after a full dinner. Hence, I woke up this morning creating a healthy version: inspired by the different textures of the Oreo Chocolate Cake, as well as the name-giving patron Coco. The result is the “Oreo” Coconut Chia Parfait – super easy to make and packed with good nutrients. It’s perfect for breakfast or as a dessert treat in the evening!
- 30g Nussyy Chia Seeds (soaked in coconut water for 45 minutes (or, even better, over night)
- 40g low-fat curd -thinned with a splash of water and a few drops of sugar-free vanilla flavoured drops
- Nussyy Raw Cacao Nibs
- Layer one ingredient after the other
Preparation: A few minutes
Take each one of the ingredients, starting with the soaked Chia seeds and layer them one after the other.
Add the blueberries and the raw cacao nibs as a topping.
